Creamy Potato Soup



Ingredients

  • 6-15 oz cans of diced potatoes
  • 1 quart half and half
  • 8 oz cream cheese
  • 8 oz sour cream
  • 1 stick butter
  • 1 medium onion-diced
  • 1 stalk celery, minced
  • 3-6 oz cooked bacon-chopped
  • 3 oz. shredded cheddar cheese
  • 1 tsp minced garlic
  • 1 tsp ground black pepper
  • 1 tsp salt

Directions

1. In a large pot saute onions, garlic and celery in butter until soft

















2. Add half and half and cream cheese

3. Whisk/stir until cream cheese is melted

4. Add potatoes



5. Using a potato masher or immersion blender mash about half of the potatoes.

6.  Add sour cream, bacon, salt, pepper and cheddar cheese


8. Cook on medium-low heat for about 25 minutes
