Cabbage Salad

Some years ago, my mom was making coleslaw when she realized that she was out of vinegar. Always resourceful she looked in the fridge and saw she had some (homemade) bread and butter pickles.  She used the pickle juice in her coleslaw that day and it was delicious.  This dish was born that day but has matured over the years into more of a cabbage salad.

1/2 head cabbage-chopped
1/2 large onion-chopped
1/2 medium carrot-chopped
1 medium tomato-chopped
4 tbsp mayonnaise
1/3 cup (roughly) bread and butter pickle juice
1/3 cup bread and butter pickles chopped

1/4 tsp celery seed
1/8 tsp dill
1/2 tsp black pepper

Mix all ingredients together.  It is best refrigerated then served the next day but it can be eaten right away.
