Loaded Mashed Potato Pierogi Potstickers

These are so good.  Really. And quite quick and easy as well!  Its a cross between a pierogi and a pot sticker filled with yummy loaded mashed potato!  The first time I made these I baked them and they were good. This time I took the potsticker route and steamed then pan fried them and they were amazing!!


Ingredients





  • Loaded mashed potatoes (Mine are instant mashed potatoes made with garlic herb butter, chopped bacon, minced onion and colby jack cheese and one egg to hold the mix together, you want the mixture to be stiff, not at all runny but not dry either)
  • Wonton wrappers
  • Water
  • 2tbsp olive oil
I'm not really giving amounts here, but about 1 1/2 cups of mashed potato made 12 of these.

Process

1. Make your mashed potatoes and set them aside (easier to work with when they are cooler)


2. Lay out your wonton wrappers and brush them lightly with water


3.  ( I forgot to take a picture of this step, but its really easy), spoon about a heaping teaspoon of mixture into the center of each wonton

4. Dampen your fingers (you'll want to dampen your fingers between every couple of wontons to make them stick together better) and pickup the two opposite corners and pinch them totheter


5. Repeat for the other two corners, it will look kind of square-ish at this point


6. Squish all the edges together to make a purse/dumpling (this is where the damp fingers are important)


7. Repeat for the rest of your potato mixture


8. Heat a non-stick skillet over high heat and spray it with non-stick spray (wonton wrappers are sticky)
9. Add about 1/2 cup of water and immediately add the potstickers and cover
10. Steam for about 2 minutes or until all the water has evaporated


11. Uncover the pan and make sure the potstickers are not stuck to the pan, then add the oil and move the potstickers around until the bottom becomes a nice golden brown, this only takes a minute so be watchful!
11. Remove the potstickers from the pan and place on paper towels to drain


Serve hot with sour cream

  1. Hi Kristi. I'm trying to make sense of your blog -- I found it when I searched for liquid diet. Now I see lots of food recipes... yum! Did you reach your goal weight and go back to normal food? How are you doing now? Would you recommend the liquid diet.

  2. Its not possible or healthy to stay on a liquid diet forever. We were on it almost 5 months and lost a combined 150 pounds. We try to eat healthy most of the time but splurge now and again. This was primarily a food blog before we began the liquid diet and is back to being that again. I think my husband would recommend it, I would not. I ended up quite sick, my liver went haywire, it couldn't handle what I was doing and I had to go back on food earlier than he did. I think women have a harder time with very low calorie and no fat than men do simply due to the way our bodies are designed to function.
