Blueberry Muffins with Extra Vegetables

Like most toddlers mine can be a picky eater so I try to get extra vegetables in to her meals whenever possible.  She loves muffins so I make these box blueberry muffins then enhance them.


  • 1 box Krustez Wild Blueberry Muffin Mix
  • 3 eggs
  • 1/2 zuchinni
  • 2 carrots
  • 1 1/2 cup spinach


  1. Preheat oven 400 degress
  2. Grease muffin pan
  3. Puree zucchini, carrots and spinach in food processor
  4.  Mix muffin mix (put in the juice from the blueberries even thought the box says not to), vegetable puree and eggs
  5. Fill muffin cups 1/2-2/3 full
  6. Bake for 20-24 minutes
These freeze very well!
