Like most toddlers mine can be a picky eater so I try to get extra vegetables in to her meals whenever possible. She loves muffins so I make these box blueberry muffins then enhance them.
- 1 box Krustez Wild Blueberry Muffin Mix
- 3 eggs
- 1/2 zuchinni
- 2 carrots
- 1 1/2 cup spinach
- Preheat oven 400 degress
- Grease muffin pan
- Puree zucchini, carrots and spinach in food processor
- Mix muffin mix (put in the juice from the blueberries even thought the box says not to), vegetable puree and eggs
- Fill muffin cups 1/2-2/3 full
- Bake for 20-24 minutes
These freeze very well!
