Grit Balls of Fire!

 Grit balls of fire! I invented a new recipe. It was really good.


  • 6 cups of grits (made thicker than normal)
  • 2-3 jalapenos minced and sautéed
  • 1 lb bacon cooked and diced
  • 12oz sharp cheddar, grated
  • 1 tablespoon salt
  • 1 tsp ground black pepper
  • a few dashes of hot sauce of your choice
  • 2 eggs
  • 1/8 cup water
  • 1/4 cup flour
  • 1 cup panko breadcrumbs

  • 3 cups of oil for frying
Spicy Aioli
  • 1/2 cup mayo
  • 1 tablespoon minced garlic
  • hot sauce to taste
  1. cook grits and then mix in the rest of the ingredients except eggs, flour and breadcrumbs.
  2. refrigerate mixture for an hour (ish) or until firm (ish)
  3. Mix eggs and water in a bowl for egg wash
  4. put flour in a bowl
  5. put panko breadcrumbs in a bowl
  6. form the grits mixture into balls
  7. Roll each ball in flour
  8. Dip each ball in egg wash
  9. Cover each ball in breadcrumbs
  10. Once all the balls are ready heat oil to 350 degrees
  11. Fry the balls until golden brown
  12. drain on paper towels
  13. Serve with the spicy Aioli
