Grit balls of fire! I invented a new recipe. It was really good.
Ingredients
- 6 cups of grits (made thicker than normal)
- 2-3 jalapenos minced and sautéed
- 1 lb bacon cooked and diced
- 12oz sharp cheddar, grated
- 1 tablespoon salt
- 1 tsp ground black pepper
- a few dashes of hot sauce of your choice
Coating
- 2 eggs
- 1/8 cup water
- 1/4 cup flour
- 1 cup panko breadcrumbs
- 3 cups of oil for frying
Spicy Aioli
- 1/2 cup mayo
- 1 tablespoon minced garlic
- hot sauce to taste
Directions:
- cook grits and then mix in the rest of the ingredients except eggs, flour and breadcrumbs.
- refrigerate mixture for an hour (ish) or until firm (ish)
- Mix eggs and water in a bowl for egg wash
- put flour in a bowl
- put panko breadcrumbs in a bowl
- form the grits mixture into balls
- Roll each ball in flour
- Dip each ball in egg wash
- Cover each ball in breadcrumbs
- Once all the balls are ready heat oil to 350 degrees
- Fry the balls until golden brown
- drain on paper towels
- Serve with the spicy Aioli
